I devised this simple recipe for an indulgent spinach crostini recipe one night (you know I love to indulge) where I figured there wasn't a thing that could be made in the house. With a few staple ingredients (we always have fresh spinach for salads), I pulled together a surprisingly tasty treat in a matter of minutes. If you're not much of a cook but are looking for a great appetizer to take over to parties, this might be a great option!
INGREDIENTS
2 cups fresh spinach, packed
1 cup cream cheese
½ blue cheese crumbles (or whichever cheese you prefer)
¼ cup pine nuts
1 clove garlic
olive oil
salt and pepper to taste
fresh baguette, sliced and toasted
DIRECTIONS
1. Blend spinach, half of the cream cheese, blue cheese, pine nuts and garlic together until it forms into a spread
2. Slowly add final bit of cream cheese and a swig of olive oil, as needed, to get mixture moist
3. Add salt and pepper to taste
4. Spread over toasted slice
5. Sprinkle parmesan cheese on top
